The Perfect Pair 1

We talked with Chief Wine Officer and Master Sommelier, Brett Zimmerman about The Great Oregon Wine Company rooted in Oregon. You don’t need to travel far for the perfect pair to a great meal. Here are some expert tasting notes from Brett Zimmerman himself.

The Great Oregon Wine
Company Rose City Rosé

APPELLATION | Willamette Valley

VINTAGE | 2016

ABV | 13%

Tasting Notes:

STYLE: Juicy, Smooth & Fruity

AROMA: Moss, cherries & oregano

FLAVOR: Cherry almond tart, lemon creamsicle, & smoked nuts

OVERALL: Taking into consideration the vibrant, fresh strawberry and delicate cherry fruit flavors, pairing something with a touch of fat, salt, and earth could be great.

ENJOY WITH: Pork chop on the grill with olive oil influenced salsa verde and roasted brussel sprouts with pancetta. As a vegetarian alternative, this wine would be ideal with composed salads that include roasted vegetables, mild cheeses, roasted nuts, and fresh garden greens.

The Great Oregon Wine
Company Pinot Noir

APPELLATION | Willamette Valley

VINTAGE | 2014

ABV | 13%

Tasting Notes:

STYLE: Juicy & Smooth

AROMA: Dark fruit jam, prosciutto & black tea leaves

FLAVOR: Ripe cassis, earthy chocolate

OVERALL: Dishes with earthy flavors should pair nicely with the dense core of Pinot Noir fruit in this wine.

ENJOY WITH: A duck confit or roasted duck breast would be an ideal protein and could be paired with roasted root vegetables, polenta, or lentils. Accent flavors of sautéed mushrooms with fresh thyme or sage would add the perfect earth and herb emphasis to the pairing.  An excellent vegetable alternative would be a grilled Portobello mushroom or a savory vegetable soufflé.
